Soak the soybeans overnight and make soy milk as usual. Strain out your soy milk and save the soybean pulp, make sure you've squeezed out all the liquid that you can;
Add soybean pulp, oat flour, cornstarch, all the prepped veggies, salt and white pepper to a mixing bowl, use your hand or a spatula to mix everything evenly;
Shape the mixture into patties, you can make them to whatever size you prefer, just keep in mind the bigger the patty the longer they'll take to cook through;
Spray the patties with avocado oil, air fry at 400°F for 15 minutes, turn them over, and air fry for another 10 minutes;
If using an oven, preheat the oven to 400°F and bake for 15-20 minutes per side, monitor the cook and add more time if needed;
Serve warm with a dip, or assemble them into burgers, enjoy!
