Vegan Gluten Free Gingham Heart Shaped Waffles

An exxxtra cute and special two-tone gingham heart-shaped waffle for Valentine's Day, anniversary, or any special occasion!

Ingredients
  

  • 2 cup 1:1 Gluten-free flour or All-purpose flour
  • 1 tablespoon baking powder
  • 2 cup unsweetened soy milk or coconut milk
  • 1 tablespoon apple cider vinegar
  • 4 tablespoon avocado oil or any neutral tasting oil you prefer
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon sugar or maple syrup if you'd like to sweeten the waffles
  • Food colorings of choice optional

Equipment

  • waffle iron; pipping bags

Method
 

  1. Sift the flour and baking powder into a large mixing bowl;
  2. In a separate bowl, add the soy milk and apple cider vinegar, let it stand for one minute, the milk will slightly curdle and thicken, and this is to create our vegan "butter milk";
  3. Add the oil, vanilla extract, and sweetener (if using) to the soy milk bowl, stir to combine, then slowly pour into the dry flour while mixing gently;
  4. Mix the batter till it's just combined, do not overmix!! A few small lumps are ok;
  5. Pour a third of the batter into another bowl, color it red, and color the rest of the batter with pink, you can choose whatever colors you like;
  6. Transfer each color batter into a piping bag;
  7. Preheat your waffle iron. When it's ready, brush the waffle iron with a little bit of oil, use the red batter to fill all the little grooves in the waffle iron, then flush fill on top with the pink batter;
  8. Close the waffle iron and let the batter cook, do not open until there's no more steam coming out;
  9. Repeat to finish all the batter;
  10. Serve warm with your toppings of choice, enjoy!

Notes

This measurement can make about 12 mini waffles, you can keep any extras in the freezer for longer storage.
