The iconic Japanese cold soba noodles made with regular soba – buckwheat noodles and cha soba, which is buckwheat soba infused with green tea.

Cold soba noodles is a rare combination, it’s the most refreshing of all the comfort food, and at the same time the most comforting for light meals. The silky, chewy, earthy buckwheat noodles get dunked in an incredibly flavorful umami, cooling broth and you won’t be able to stop slurping them! I always have to start with a minimum of two servings of noodles they’re that good!

100 percent buckwheat soba is naturally high protein and gluten free, however, please pay attention to the ingredients of your soba as some of them are mixed with wheat flour. And you can play with more noodle flavors, I personally love cha soba, they’re infused with green tea which gives them a subtle tea flavor and green color.

Ingredients
Method
- Make the broth first, in a sauce pan, combine water, mirin, soy sauce, and dry kombu, heat over low heat and bring to a boil, then let it simmer for. 5 minutes;
- Remove the kombu, let the broth cool down to room temperature then transfer into the fridge to chill;
- Bring a large pot of water to boil, add in the soba noodles and spread them around so they don’t stick together, cook till they reach your preferred texture, the cooking time can vary depending on the type of soba you use;
- Once the noodles are done cooking, immediately drain and transfer the noodles to a ice water bath for an icy “shock”, this will give the noodles a much better chew and keep them from over cooking or sticking together;
- Transfer the noodles to a plate, top with shredded nori and toasted sesame seeds;
- Serve the noodles chilled, with the cold broth, and you can also add grated ginger, daikon, wasabi, and scallion to season the broth to your liking. Enjoy!
