Air Fryer Corn Ribs with Sweet n' Spicy Glaze and Tofu Ranch Dipping

Easy, fun, finger-licking yum snack you can make with your cobs of corn!

Ingredients
  

  • 2 cobs of corn
  • 1/3 cup avocado oil or other high-temperature safe oil you like
  • 1 1/2 - 2 teaspoon smoked paprika
  • 1 1/2 teaspoon ground cumin
  • 1 teaspoon coriander
  • Good pinch of salt and freshly ground black pepper adjust to your preferred level of saltiness
For the Gochujang Glaze
  • 2 tablespoon gochujang paste
  • 1 tablespoon ketchup
  • 2 tablespoon light soy sauce
  • 1 tablespoon maple syrup
  • Water to thin
For the Tofu ranch dip
  • 6 oz silken tofu
  • 1 tablespoon dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon white miso paste
  • 2 teaspoon nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • Freshly chopped parsley

Equipment

  • Air fryer
  • Blender

Method
 

  1. Use a sharp knife to cut your cobs of corn into strips, first cut into halves, then cut them lengthwise into 4 pieces;
  2. In a small bowl, whisk together the oil and spices;
  3. Add all the corn ribs to your air fryer basket, make sure they're not overcrowded. If your basket is small you might wanna cook them in batches;
  4. Drizzle the oil spice mixture over the corn ribs, and toss to coat every piece well;
  5. Air fry at 390°F for 12 minutes, check on them and toss around again, then air fry for another 5 minutes, each air fryer is different so monitor the cook and adjust the cooking time accordingly;
  6. Meanwhile, mix together the gochujang glaze, the thickness of gochujang paste varies from brand to brand so there isn't a fixed amount of water you need to add, drizzle water slowly while whisking to thin the glaze to your preferred consistency;
  7. To make the tofu ranch, add everything except the fresh herbs to a blender and blend till very smooth, mix in the fresh herbs afterwards;
  8. Once the corn ribs are cooked, drizzle the gochujang glaze on them or toss them in a large bowl to coat, serve hot with the dipping sauce, enjoy!
