Wondering what to do with your cobs of corn besides boiling or grilling them? Turn them into these easy corn ribs that are literally finger-licking good!

If you love grilled corn or deep fried street corn, you’ll love these healthy air fried corn ribs! They are every bit as irresistible but without causing a big oily mess to make and much healthier than deep frying.

The flavor profile is completely customizable! First, coat your corn ribs with a little drizzle of oil, dry spices, and seasonings you like. You can go super minimal with just salt n’ pepper, or add more for a smoky flavor combo, or even more flair like curry, za’atar, Old Bay seasoning, etc.

Then, after they’re done cooking, you can dress them up even more by drizzling on or tossing them in a flavorful sauce, gochujang glaze, teriyaki, BBQ sauce, buffalo sauce, mango habanero… It’s your second chance to add whatever flavor you like! And last comes the dipping, your bonus opportunity to add another layer of flavor and texture that pairs well with the previous seasonings.

- Use a sharp knife to cut your cobs of corn into strips, first cut into halves, then cut them lengthwise into 4 pieces;
- In a small bowl, whisk together the oil and spices;
- Add all the corn ribs to your air fryer basket, make sure they’re not overcrowded. If your basket is small you might wanna cook them in batches;
- Drizzle the oil spice mixture over the corn ribs, and toss to coat every piece well;
- Air fry at 390°F for 12 minutes, check on them and toss around again, then air fry for another 5 minutes, each air fryer is different so monitor the cook and adjust the cooking time accordingly;
- Meanwhile, mix together the gochujang glaze, the thickness of gochujang paste varies from brand to brand so there isn’t a fixed amount of water you need to add, drizzle water slowly while whisking to thin the glaze to your preferred consistency;
- To make the tofu ranch, add everything except the fresh herbs to a blender and blend till very smooth, mix in the fresh herbs afterwards;
- Once the corn ribs are cooked, drizzle the gochujang glaze on them or toss them in a large bowl to coat, serve hot with the dipping sauce, enjoy!
