Finely mince the garlic and ginger, in a sauce dish, combine garlic, ginger, soy sauce, coconut amino, vinegar, sesame oil, and brown sugar, mix well;
Slice the tofu and avocado into about 1/4 inch thick slices;
On your serving dish, alternate the tofu and avocado slices in one straight formation;
If you wish to add crispy shallots, you can use the ready made kind or make your own. To make your own, thinly slice your shallots, heat enough high smoke point oil like avocado oil in a deep pan, carefully transfer all the shallot slices in and fry them over medium-low heat until golden brown and crispy, save the oil!! It's super aromatic and would work great in any sauté dish;
When ready to serve, pour the dressing over the salad, garnish with crispy shallots and chopped scallions, enjoy!
