The hottest days call for the coolest recipes, and this one is it. It’s so easy to put together I can barely call it a recipe. And yet the beauty is in the simplicity – the tender, silky, and velvety texture of silken tofu meets the rich, creamy, and hearty bite of avocado, who knows they can be simply heavenly together!

This dish is also such a zen experience, from preparing to eating. When handling silken tofu, of course you gotta be gentle, so making this dish kind of forces you to calm down, slow your heartbeat, and really be in the moment. Then once you pour the aromatic dressing onto the neatly arranged avocado and tofu slices, you feel all your senses awakening and ready to embrace your beautiful creation.

And as a bonus, both silken tofu and avocado are high in healthy fatty acids, especially omega-6 and omega-3, which decrease the risk of coronary artery diseases, help lower blood pressure and guard against irregular heart rates. So it is a simple but mighty combo.

As far as texture goes, I personally love the tender, soft, velvety combo of both avocado and silken tofu but if you’re looking for a crunch factor I highly recommend some crispy shallots as topping! I will include how to make your own crispy shallots in the recipe below.

Avocado Silken Tofu Salad

No cook, no heat, this easy breezy dish is the perfect example for minimum effort yet maximum satisfaction. Velvety, creamy, fall apart in your mouth with the most flavorful sauce and crispy shallots for contrast.

Ingredients
  

  • 1/2 large avocado
  • 7 oz silken tofu
  • 2 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 2 tablespoon soy sauce or tamari sacue
  • 1 tablespoon coconut amino
  • 1/2 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon brown sugar
  • 1 scallion chopped
  • Crispy shallots if preferred

Method
 

  1. Finely mince the garlic and ginger, in a sauce dish, combine garlic, ginger, soy sauce, coconut amino, vinegar, sesame oil, and brown sugar, mix well;
  2. Slice the tofu and avocado into about 1/4 inch thick slices;
  3. On your serving dish, alternate the tofu and avocado slices in one straight formation;
  4. If you wish to add crispy shallots, you can use the ready made kind or make your own. To make your own, thinly slice your shallots, heat enough high smoke point oil like avocado oil in a deep pan, carefully transfer all the shallot slices in and fry them over medium-low heat until golden brown and crispy, save the oil!! It’s super aromatic and would work great in any sauté dish;
  5. When ready to serve, pour the dressing over the salad, garnish with crispy shallots and chopped scallions, enjoy!
