Cut the pineapple into 1/2 inch strips and freeze it for at least 6 hours or overnight until solid;
Make the condensed coconut milk sauce, in a sauce pot, heat the full fat coconut milk over medium-low heat until the solids melt and the entire mixture become consistent;
Add in the monk fruit extract and arrowroot powder, stir to mix well, bring to a slow simmer then reduce the heat to low and keep stirring, it'll get thicker the longer you cook it, you can adjust the cooking time to your preferred consistency but I like the coconut milk be thick enough to coat the back of a spoon but still fliud;
Add a good pinch of salt to taste, depending on how salty you like it, set aside to cool;
When ready to serve, take out the pineapple and grate it into a bowl, drizzle on some salted condensed coconut milk, enjoy!
