A literal ONE ingredient frozen dessert that’ll for sure be your summer favorite! This is the one of the very few trendy recipes that I tried and actually loved, and haven’t been able to live without.

Making frozen summer treat has never been easier! I don’t know who first invented this frozen fruits to snow cone/shaved ice hack but it is pure genius. It takes little to no time to prepare and the result is so delightful, refreshing, and satisfying.

I’ve tried frozen watermelon, frozen peach, and my favorite so far is frozen pineapple! Pair it with some homemade salted condensed coconut milk – I made it sugar free by the way – and you’ll get a cold, fluffy, refreshing treat that tastes like a virgin piñs colada!

One Ingredient Frozen Pineapple Snow Cone with Salted Condensed Coconut Milk

Summer frozen dessert has never been easier! This one ingredient, sugar free, healthy snow cone will be your holy grail for hot weathers.

Ingredients
  

  • 1/2 pineapple for 2 servings
  • 1/2 14 ounce can full fat coconut milk
  • 2-3 tablespoon pure monk fruit extract
  • 1/2 teaspoon arrowroot powder
  • A good pinch of salt I added 1 teaspoon

Method
 

  1. Cut the pineapple into 1/2 inch strips and freeze it for at least 6 hours or overnight until solid;
  2. Make the condensed coconut milk sauce, in a sauce pot, heat the full fat coconut milk over medium-low heat until the solids melt and the entire mixture become consistent;
  3. Add in the monk fruit extract and arrowroot powder, stir to mix well, bring to a slow simmer then reduce the heat to low and keep stirring, it’ll get thicker the longer you cook it, you can adjust the cooking time to your preferred consistency but I like the coconut milk be thick enough to coat the back of a spoon but still fliud;
  4. Add a good pinch of salt to taste, depending on how salty you like it, set aside to cool;
  5. When ready to serve, take out the pineapple and grate it into a bowl, drizzle on some salted condensed coconut milk, enjoy!
