A dreamy cake that’s as pretty as it’s irresistibly delicious! Very beginner friendly as well, hard to mess up this one ^^

With all the beautiful summer stone fruits, I felt the calling of the season to make an upside down cake and when I was designing the flavor profile in my head, I suddenly remembered this amazing German almond cake I had once.

Almond on its own is nowhere close to my favorite nut but mixed in desserts? Holy yum it’s magical, like Marzipan, Amygdalota, and now this almond cake! It’s soft, moist, aromatic, perfectly sweet but not too much.

This cake is very beginner friendly, super easy to make and can even be made gluten-free – see substitution in recipe. And you can also use other types of fruits including peaches, pears, and pineapples!

Ingredients
Method
- Preheat the oven to 350° F;
- Wash and cut the plums into 1/8 inch thick slices, make sure you have enough to cover the bottom of your cake pan;
- Spray a 9 inch cake pan with oil, line the bottom with parchment paper, then lightly spray the paper, spread the caramel sauce evenly at the bottom;
- Arrange the plum slices starting from the center and into an outward spiraling pattern until you cover the entire pan, set aside;
- Mix all the wet ingredients in a large bowl, then sift all the dry ingredients into the bowl, fold and mix everything together;
- Pour the batter into the cake pan, bake for 50-55 minutes until the cake looks nicely browned and a toothpick comes out clean;
- Let the cake cool down for an hour, turn up side down to de-mold, slice and enjoy!
