The easiest waffles ever! These crispy, fluffy, chewy, and perfectly sweet waffles only call for two ingredients, super quick to make even when you’re pressed for time.

These oatmeal waffles are here to redefine “quick breakfast”, just grab your favorite oatmeal, add a bit of plant milk, and quickly enough you’ll get a delicious breakfast treat – golden crispy on the outside, fluffy and chewy on the inside, and at the same time very hearty and fulfilling.

You can of course use plain oatmeal and add your preferred spices and sweetener, but to truly make this a quickie meal I recommend using an oatmeal mix that’s already flavored! Having my fave pre-flavored oatmeal mixtures that are certified organic and healthy like apple cinnamon, coconut sugar & spice, cacao nibs, and vannilla chai has saved my life in the past especially when I pushed that snooze button one too many times in the morning 😉

Two-Ingredient Vegan Oatmeal Waffles

The easiest and quickest breakfast you can make with only 2 ingredients, and it’s so yummy and healthy at the same time you might even want them for dinner.

Ingredients
  

  • 1 cup Coconut Sugar & Spice Oatmeal or any other flavor you like
  • 1/3 cup soy milk
  • Refined coconut oil for cooking

Method
 

  1. Mix together the oatmeal and soy milk, let the mixture sit while you get your waffle iron heated up, the oatmeal mixture will get thicker the longer it stands;
  2. Heat up the waffle iron, brush on a bit coconut oil on both sides, add enough oatmeal mixture according to the size of your waffle iron, close;
  3. Wait and enjoy the amazing aroma, do NOT open until the steam stops coming out!
  4. Serve hot with syrup and fruits, enjoy!

Notes

If you’re using plain oatmeal, be sure to add flavorings you like, sugar, cinnamon, vanilla extract, etc
