Stop throwing out the leftover bean pulp after you make soy milk! Make these delicious little flavor bomb patties that are packed with nutrients – high in protein, fiber, and essential minerals.

Soy bean pulp, or okara, or Dou Zha in Chinese, is a byproduct leftover from soy milk making. While often discarded as food waste, it’s actually an underrated, nutrient-dense food! It’s a rich source of dietary fiber, high-quality plant protein, essential fatty acids, and vital minerals, including calcium, iron, potassium, and phosphorus.

In addition to its impressive nutritional value, soybean pulp has an incredibly smooth, creamy, and refined texture and a mild, earthy, and neutral taste. My grandma loves to use soybean pulp to make her famous veggie stew with daikon and leafy greens. It also works wonderfully well as a base for veggie burger patties!

These patties are not only great for reducing food waste but also for fridge clearing! You can add whatever scraps of veggies you have to the mixture. I also kept these patties gluten-free and cooked them in my air fryer. You can also bake them in a regular oven, I’m including instructions for both in the recipe below.

No Waste Okara/Soybean Pulp Patties

Humble, nutritious, and sooo delicious! Never throw out your soybean pulp again.

Ingredients
  

  • 200 g dry soybeans
  • 1/2 cup oat flour
  • 1/4 cup cornstarch
  • 1 carrot finely chopped
  • 2 scallions chopped
  • 3 oz shiitake mushrooms chopped
  • 2-4 fresh peppers chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • Avocado oil spray

Method
 

  1. Soak the soybeans overnight and make soy milk as usual. Strain out your soy milk and save the soybean pulp, make sure you’ve squeezed out all the liquid that you can;
  2. Add soybean pulp, oat flour, cornstarch, all the prepped veggies, salt and white pepper to a mixing bowl, use your hand or a spatula to mix everything evenly;
  3. Shape the mixture into patties, you can make them to whatever size you prefer, just keep in mind the bigger the patty the longer they’ll take to cook through;
  4. Spray the patties with avocado oil, air fry at 400°F for 15 minutes, turn them over, and air fry for another 10 minutes;
  5. If using an oven, preheat the oven to 400°F and bake for 15-20 minutes per side, monitor the cook and add more time if needed;
  6. Serve warm with a dip, or assemble them into burgers, enjoy!
