Unlock the ancient Chinese beauty secret with this ethereal treat! It’s a dessert AND a medicinal soup that nourishes our skin and health from inside out.

Snow ear and peach gum soup is a popular Chinese dessert known for its nourishing and rejuvenating properties. It’s believed to give our skin a healthy glow, promote collagen production, and fight signs of aging. From empresses, princesses, to modern day celebrities, Asian women have loved this soup for literally thousands of years and also one of my absolute favorite treats growing up.

Snow ear mushrooms, also known as snow fungus, or white jelly mushrooms, are commonly used in Chinese cuisine and even traditional medicine. These mushrooms are low in calories and fat, and they are a good source of dietary fiber. They are also believed to possess various health benefits, such as supporting the immune system, promoting healthy skin, and aiding in digestion.

Snow Ear Beauty Soup with Rose Mochi

Enjoy this heavenly ethereal dessert that’s nourishing to your skin and health, and gives you a glow up from the inside out!

Ingredients
  

For the snow ear soup
  • 1 large dry snow ear mushroom
  • Handful of Jujube dates do not substitute for medjool dates!
  • 1/2 cup rock sugar or brown sugar
  • Water adjustable
For the rose mochi
  • 1/2 cup glutinous rice flour
  • 1/4 cup warm water
  • 1 tablespoon pure monk fruit extract
  • 1/2 tablespoon organic dried rose petals
  • Ice water bath

Method
 

  1. Soak the snow ear for 1 to 2 hours until it’s rehydrated, tear into small pieces, discard the hard core;
  2. Transfer the snow ear into a clay pot or enamel pot, add enough water to cover all the snow ear pieces with about 1/4 inch water extra, you can add more or less water based on how thick or thin you want the soup to be;
  3. Cover and bring the pot to a gentle simmer, let it simmer over medium-low heat for 40 minutes to 1 hour, I like to let it simmer longer to get the ingredients all gelatinized and the soup always becomes a jelly consistency;
  4. Meanwhile, wash some jujube dates, you can add as many or as few as you like, other nice additions would be dry longan, goji berry, and lotus seed;
  5. Once the snow ear reaches your preferred softness, add in the rest of the ingredients, cover, and cook for another 10 to 15 minutes;
  6. Sweeten the soup with rock sugar or brown sugar right before you remove it from heat;
  7. If making the rose mochi, in a mixing bowl stir the warm water into the flour, sprinkle in the rose petals, then knead with your hands to bring to a smooth, soft, yet not sticky dough;
  8. Roll the doll into a thin long strip, cut into small bite sizes then roll each piece into a ball;
  9. Bring a pot of water to boil, drop the rose mochi balls into the pot and be careful not to have them touch each other and get stuck together, boil until they all float to the surface, remove and drop them immediately into the ice water bath;
  10. Serve the snow ear soup hot or cold up to your preference, top with the rose mochi, enjoy the ethereal treat the glowup!
