Only four ingredients, this avocado crust is moist and soft inside with the perfect amount of chew while golden crispy on the bottom and edges.

Did you know you can crack an avocado like an egg? Next time you have a very ripe avocado on your hand, give it a try! You won’t even need a knife to open it. Add a dash of flour and we can turn it into a soft dough that makes a fantastic pizza crust.

The natural healthy fats in avocado keeps the dough soft and moist without any added oil and of course, it gives the crust a beautiful green color and rich avocado flavor. The crust itself has a very neutral taste so you can add any toppings you like.

I added a homemade tofu “cream cheese” spread, onions, asparagus, and sweet peas. Then topped with some edible flowers because I just love the color and freshnees they bring to the dish!

Avocado Crust Pizza Vegan Gluten Free

Crack your ripe avocado like an egg and let’s make pizza! It’s golden crispy on the bottom while soft, moist, and chewy on the inside.

Ingredients
  

For avocado crust-
  • 1 large ripe avocado
  • 1 1/4 – 1 1/2 cup gluten-free flour or use all-purpose flour if you don’t need it to be GF
  • 1 1/2 teaspoon baking powder
  • Pinch of salt
For tofu cream cheese-
  • 6 oz extra firm tofu
  • 1 tablespoon nutritional yeast
  • 1/2 tablespoon white miso paste
  • 1/2 lemon juiced, about 4 tablespoon
  • Pinch of salt to taste
Toppings of choice-
  • 10 spear asparagus
  • 1/4 red onion thinly sliced
  • 1/4 cup sweet peas
  • Extra virgin olive oil
  • Lemon juice
  • Edible flowers optional

Method
 

  1. Preheat the oven to 475°F;
  2. Crack open and scoop out all the avocado flesh into a mixing bowl, add in the flour, baking powder and salt, knead and mix with your hands, make sure to crush the avocado well;
  3. Start with 1 cup of flour and gradually add more, until it comes together as a soft dough, cover and let it rest for 15 minutes;
  4. Meanwhile, make the tofu cream cheese, add all ingredients to a kitchen processor, pulse and blend till it’s smooth;
  5. Once the dough is rest, knead again for about 5 minutes until the dough is very smooth and even, transfer the dough to a baking sheet lined with parchment paper;
  6. Press the dough into a flat disk, twirl and stretch it out into a pizza crust shape, the bigger you stretch it the thinner the crust becomes, so you can adjust based on your preference;
  7. Spread the tofu cream cheese evenly, add thinly sliced onions, then the asparagus, and finally the peas on top;
  8. Bake for 10-12 minutes, based on the thickness of your crust, monitor the bake so it doesn’t brown too much;
  9. Once the bottom and edges are golden brown, take the pizza out, drizzle with extra virgin olive oil and lemon juice, decorate with edible flowers if you like, slice and enjoy!
